Rodizio is a style of dining in which our guests pay a prix fixe and enjoy mouth-watering cuts of meat, gourmet appetizers, sides, salads and delicious desserts. Try as many different cuts of fire-roasted meats as you like… beef, lamb, chicken and pork. At Espetus, we cook our meats on a unique fire grill, minimally seasoned and brushed with saltwater to draw out and enhance the flavors of our premium meats. Servers circulate the dining room with skewered portions of tender, flavorful roasted prime cuts, slicing and serving the selections for each guest.
When the Spanish came to South America at the end of the 16th century, they introduced domesticated cattle to many of the areas which they explored and colonized. A hearty and successful stock, cattle flourished in the grassy pampas of Southern Brazil, and a rural culture developed around cattle as a large part of their diet and sustenance. Herders (gauchos), ranchers, and rural townsfolk would often skewer and roast their beef over coal and hot embers, a cooking style which developed into the foundation for the succulent slow roasting methods of modern Brazilian steakhouses. The popularity of this cooking style blossomed, and with cattle in abundant supply the rodizio style of dining was born.
